The Best Raw Honey Roast Carrot Recipe

Spring has sprung! And that means bees are waking up and spring vegetables are ready for harvest - such as the carrot! And what better way to combine bees and carrots than to share one of our favorite carrot dishes?

And as a bonus, we’re throwing in an optional Honey-Butter recipe that will complement this
In this post, we’ll briefly discuss the nutritional benefits of honey as well as a recipe for our favorite honey roasted carrots dish - and which honeys we recommend!

Which Honey?

Before we dive right into it, here are some of our recommended honeys for both our Honey Roasted Carrots and Honey-Butter recipe.

Star Thistle

This option is sourced from the nectar of the star thistle flower that brings out a smooth texture with delicious notes of nuttiness and a hint of spice.

Orange Blossom

Produced from citrus fruits such as grapefruit, lemons, limes, and of course oranges that give it its delicate orangy aroma that differentiates this option from others.

Meadowfoam

Lastly, we recommend Meadowfoam, one of our most popular options. It’s known for its subtle and gentle flavor and touch of sweet floral undertones that compliments just about any drink or meal you prepare!

Honey-Butter Recipe


Ingredients

1.) 3 tablespoons of butter
2.) A pinch of salt (if butter is unsalted)
3.) A pinch of pepper
4.) 2 teaspoons of honey of your choice
5.) 1 tablespoon of fresh garlic
6.) 1 teaspoon of rosemary

Instructions

1.) In a small bowl, put in butter, and microwave for 15 seconds
2.) Once warmed, add the salt, pepper, honey, garlic, and rosemary
3.) Using an electric hand mixer, mix together all the ingredients until it becomes creamy
4.) Refrigerate your butter in any container and put a two week expiration date
5.) Serve or cook it with your favorite dishes!

Honey Roasted Carrots

Now to the good stuff!

For centuries, honey has been nature’s natural sweetener and is used in various ways; a sweetener for tea being the most common. Made naturally by honeybees from the nectar of flowers, honey offers a unique syrupy flavor that compliments not only different drinks but also dishes such as our Honey Roasted Carrots.

Roasting carrots brings out their natural sweetness while its caramelization makes them irresistible; and when you cook it perfectly - soft on the outside with the perfect amount of crunch on the inside - they’ll be a family favorite in no time. In this recipe, we’ll show you how to make perfect delicious honey roasted carrots that even the pickiest of eaters will love.

Ingredients

1.) 1 lb Carrots, peeled, and sliced into 1/4 rounds
2.) 3 tablespoons of honey-butter (or olive oil)
3.) 1 teaspoon of salt
4.) 1/2 teaspoon of pepper
5.) 1 tablespoon of fresh garlic
6.) 1 1/2 tablespoons of thyme
7.) 2 tablespoons of honey of your choice
8.) pinch of crushed red pepper flakes (optional for those who like a hint of spice, and those that want extra, try this hot version)

Instructions

1.) Preheat Oven to 400°F (200°C).

2.) In a mixing bowl, mix together the honey-butter, honey, salt, pepper, thyme, and peppers until combined - it should have a syrupy texture.

3.) Add sliced carrots to the mixing bowl and toss until the carrots are well coated in the mixture.

4.) On a baking sheet (greased or lined with parchment paper), spread the carrots out evenly.

5.) Roast the carrots in the preheated oven for 20-30 minutes or until they are tender golden brown. Be sure to stir the carrots halfway through cooking to ensure they are cooked thoroughly.

6.) Onced done, remove the carrots from the oven and serve them on a dish.

7.) Eat and enjoy!
