β€œ March 3, 2021 - Oh my gosh, I could eat this by the spoonful! It is heavenly!!! It's very smooth and the matcha flavor is perfect! I don't think it could be any better. I can't wait to try it with lemonade this summer. (I will try to remember to update my review)
Update: I warmed up some lemonade and added this honey...I let it cool and served over ice. It was pretty tasty. πŸ’š my favorite way to use this honey is to add a little to my oatmeal! ”

β€œ This honey is so flavorful. I tried it by itself first to really get a feel for the flavor and the matcha is very forward. It's deep and intense, lightly sweet. I expected the opposite, a heavy sweetness and light flavor but I am so pleasantly surprised! The jar is packed to the brim and it does come solid. I found it dissolves rather well in hot liquid, but like others it is hard to spread until it's warmed up.

Once it's warmed it spreads like regular honey. The color is gorgeous, a true matcha green. I'm looking forward to playing around with it to see what all I can mix it with or eat it on. I highly recommend.

Also, it was very exciting to discover it's from my state of Maine! ”

How long have you been keeping bees and what got you started?
β€œI have been interested in bees since I'm 5 years old. As a child I used to catch them in a mason jar and release them. I was fascinated.”
Can you describe a typical day out in the apiary?
β€œA typical day consists of having the bees always as a first priority over honey production. Unhealthy bees equals no honey crops.”
What is your favorite part of keeping bees?
β€œMy favorite part is knowing that I'm out there with the bees and myself. Helping them with what they need to make a nice honey crop. I take good care of them they take good care of me with a quality surplus of honey.”
Conversely, what is the hardest part of your job?
β€œThe hardest part of the job is controlling reproduction swarms in spring. Mid summer is controlling pests that collapse the colonies such as mites.”
What are some non-obvious ways to enjoy honey?
β€œWe love honey on ice cream. Our honey is great right out of the jar. Raw Honey is used for medicinal purposes. It removes infection from cure and scraps. Of course. Though tea and honey are a match made in heaven.”
