Our Raw Garden Herbals Honey has been specially selected to pair with our more herbaceous tisanes. Produced from the nectar of the blueberry plant and is native to North America. This monofloral honey features a medium amber color and a slightly floral flavor.

Adagio has done a great job at giving us honeys for each tea type. I don’t have to use much of this as most herbals are a little sweet on their own already. I love how it enhances the tea without changing the flavor of it.

This honey is pleasantly thick and packs a flavor punch. There are layers of flavors that make this so much more complex tasting than any honey you would buy at a regular store, and much more economical than buying fancy honey at a specialty store. I find this to be pretty sweet and have found that a little goes a long way in a cup of tea. I generally don’t sweeten my tea, but out of curiosity I wanted to give it a try. Honestly, it made my tea too sickeningly sweet, even in a very small dose. For me, I now know that honey is not the way I prefer to sweeten my tea (I prefer the rock sugar), BUT this honey is delicious and I will happily slather it on toast, biscuits, scones, etc.

I compared a little taste of this honey side by side to the black tea, green tea, and Tupelo honey samples, and garden herbals was hands down the favorite by taste (without any tea involved)! We will see how they stand out in tea. So far it’s nice in the key lime herbal tea.

A perfect honey for herbals and other earthy, herbaceous teas. It has a sweetness that is more subtle than some of Adagio's other honeys, which makes it a perfect compliment to teas that need a little something extra where most additives might over-sweeten or clash with the flavor profile. I love this honey in lavenders and mints, it lifts them up beautifully without 'sugaring' up the tea.

What is the criteria by which you define honey as raw? Has it been heated? If so, to what temperature? And has the pollen been filtered out?
